This easy Cheeseburger Frittata Recipe is a delicious low carb option for breakfast, lunch or dinner.

The frittata is one of those dishes that often get overlooked as a go-to. Frittatas are quicker cooking and a tad lighter than their fancy cousin, the quiche, having no crust, or heavy cream. And similar to an omelet, they are the perfect low carb vehicle for a variety of flavor combinations. Which is a good thing, since I was in the mood for a cheeseburger, without the carbs along for the ride. Hence theCheeseburger Frittata.

For this Cheeseburger Frittata recipe, cheddar cheese, sautéed onions, and browned hamburger, seasoned with salt, pepper, plus our favorite hamburger addition, garlic powder, were added. But create your Cheeseburger Frittata your way. Bacon, tomatoes, along with sautéed mushrooms would be great additions too.

Even though Frittatas are commonly cooked in a skillet stovetop, then finished in the oven, I baked this simple frittata in a pie pan in the oven for the whole cook time. It worked fine and I liked the lighter texture a little better than the more firm bite that most frittatas I have made stovetop have.

This easy frittata is not only a great option for breakfast, but served with soup or salad, but thisCheeseburger Frittata is an excellent option for brunch, lunch or supper too. (And if you wanna enjoy it with a squirt of ketchup, I certainly won’t tell anyone.)

Cheeseburger Frittata

Yield: 8

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

This simple frittata, made with ground beef, sautéed onions and cheddar, is a delicious low carb option for breakfast, lunch or dinner.

Ingredients

  • 12-16 ounces (weight) ground beef
  • 1/4 teaspoon + dashes salt, divided
  • 1/4 teaspoon + dashes pepper, divided
  • 1/4 teaspoon + dashes garlic powder, divided
  • 1 tablespoon olive oil
  • 1 medium-large onion, chopped
  • 10 large eggs
  • 3 tablespoons milk
  • 4 ounces (weight) cheddar cheese, shredded, divided
  • optional additions: bacon, sautéed mushroom, sliced/diced tomatoes

Instructions

  1. Preheat oven to 400-degrees F.
  2. Butter or coat with cooking spray pie pan. (I used a 10-inch pie pan for this recipe, but a 9-inch deep dish should work as well.)
  3. Brown hamburger with a few pinches/dashes of salt, pepper and garlic powder.
  4. Heat olive oil over medium heat and sauté onion with a pinch of salt and pepper until translucent.
  5. Beat together eggs, milk, 1/2 of shredded cheddar cheese, and 1/4 teaspoon of each: salt, pepper, and garlic powder.
  6. Evenly distribute the browned hamburger on the bottom of the pie pan, then top with sautéed onions.
  7. Pour the egg mixture over the top of hamburger and onion. Top with remaining cheese.
  8. Bake in 400-degrees F oven for 15-20 minutes until set. (I used a 10-inch pie pan, so adjust cooking time accordingly for different size.)

I have only made a frittata once – not because I don’t like them, but because I forget about them. And seriously could anything with the word cheeseburger in the title be a bad thing?

FAQs

How do you keep frittata fluffy? ›

Tips for Fluffy Eggs

You can add up to 1/2 cup per dozen eggs. Don't overcook! Overcooking eggs makes them rubbery. When you remove the Frittata from the oven, it will continue to cook, especially if you are using cast iron, which retains heat well.

What is the frittata ratio to memorize? ›

The Frittata Ratio to Memorize

So how do you make a great frittata every time without always using a recipe? The answer is a ratio. For every six eggs, use 1/4 cup heavy cream, 1 cup cheese, and 2 cups total of vegetables and/or meat.

How to tell if frittata is done? ›

The eggs should be cooked through, not runny and a knife should come out clean when inserted into the centre. You can also give the skillet a gentle shake to determine if it is done; a runny frittata will jiggle when you shake the skillet.

Why is my frittata still runny in the middle? ›

If the center is still liquid, you've got to cook longer. If it's almost set, cook the frittata a few more minutes, then remove it. As long as the frittata is still in the hot pan, it will continue to cook. That's why it's important to pull the dish from the oven as soon as it reaches that "set" stage.

What kind of cheese is good in frittata? ›

I love to use soft cheeses like goat cheese. Sharp cheddar and Parmesan are delicious as well. You can stir up to one cup of grated or crumbled cheese directly into the egg mixture, or reserve some for topping the frittata.

What is the frittata formula? ›

The Frittata Formula

Frittatas are incredibly simple. For every six large eggs, you'll want to mix in ¼ cup of milk or cream, ¼ cup of cheese, and about 3 cups of meat or vegetables. The small amount of milk and cheese keeps the eggs soft and creamy and the meat and vegetables give you endless options.

What gives a higher volume and better texture to scrambled egg? ›

I personally like adding a splash of milk or cream directly to my eggs before I start cooking. I find that it makes them more tender—plus, it's a great way to add more volume to your scrambled eggs if you're maybe running low and need to feed a few.

When making a frittata, which ingredient should be pre-cooked prior to adding it to the egg mixture? ›

Tough vegetables like potatoes, squash and onions need to be pre-cooked since they will not have time enough to soften before the eggs are done. Raw meats such as bacon and sausage also need more time and heat to cook through safely, so get them prepped before your other ingredients.

How many eggs is enough for scrambled eggs? ›

Whisk your eggs with the salt until they're well-mixed and uniform. Count on about two eggs per person, so this scrambled egg recipe (which calls for six eggs) serves about three people. Warm butter in a skillet set to medium-low heat. Once it's juuuuust beginning to bubble, pour the eggs in.

Why did my frittata turn green? ›

The green-gray color (and the whiff of sulfur smell that often accompanies it) comes from the reaction of iron in the egg yolk and sulfur in the egg white.

How jiggly should a frittata be? ›

When you pour in your eggs, let the frittata set for a couple of minutes on the stovetop. Then keep an eye on it when it's in the oven, and take it out when it's still a touch jiggly—not quite creme brulee-level jiggly, but when the top is a still a tiny bit shaky, get that frittata out of the oven and serve it warm.

Should you flip a frittata? ›

Pre-seasoning the eggs with salt helps them retain moisture during cooking. Cooking the vegetables in batches gives us more control over their texture. Keeping the cheese in large chunks gives us oozy pockets in the frittata. Flipping the frittata ensures a creamy, dense center.

How to avoid watery frittata? ›

Never use uncooked vegetables in a frittata

Therefore, if you add them to the mixture raw, you'll end up with a watery frittata with undercooked vegetables. That's precisely why leftover vegetables are traditionally used, so while you could use fresh vegetables, you'll need to sauté them beforehand.

How do you keep frittata from burning on the bottom? ›

Too much time on the stovetop, or too high of a flame, and the frittata will easily get too much color or burn on the bottom. Follow this tip: Cook the frittata on the stovetop, keeping the heat at medium-low to low, just until the edges have set, which takes about a few minutes.

How to avoid soggy frittata? ›

But if you're starting from scratch, it's best to fully cook any addition that might release moisture into the eggs—mushrooms, tomatoes, and summer squash or zucchini are common "wet" culprits than can water down your eggs. Sauté them separately.

How do you keep frittata from going flat? ›

Forgetting to add milk or cream.

Without this important addition, frittatas cook up flatter and a bit more dense. Follow this tip: After whisking the eggs together, be sure to whisk in some milk or cream. As a rule of thumb, use 1/4 cup of dairy for every six eggs.

How do you keep eggs fluffy? ›

Add Moisture and Mix

Since dryness leads to dense, chewy eggs, this is a chance to boost your eggs with some extra moisture. Adding approximately 1 tablespoon of liquid per egg—milk or cream are delicious, but water works, too—will help create steam and keep the scrambled eggs moist.

How to prevent frittata from deflating? ›

Don't overdo it with the dairy

It can leave the dish soggy, keep it from holding its shape, and may even prevent your eggs from firming up entirely. To avoid falling into the "too much moisture" trap when prepping your next frittata, always completely drain any fresh ingredients before adding them to your pan.
