Ingredients

Hot Dogs –Any kind of hot dogs will do for this recipe, so choose your favorite.

Yellow Cornmeal –Be sure to purchase “finely ground” cornmeal. Coarse yellow cornmeal can lead to a gritty cornmeal batter.

All-purpose Flour –To thicken the batter.

Baking Powder –This leavener helps the corndog batter to be light and fluffy.

Sugar –For a touch of sweetness.

Salt – Any salt will do, but my favorite isRedmond’s Unrefined Fine Sea Saltfor extra natural minerals.

Milk –Brings moisture to the batter.

Unfed Sourdough Starter –Use sourdough discard that is less than 2 weeks old.

Honey –Adds some sweetness and a honey flavor.

Egg– Help bind the batter.

Frying Oil –Choose a neutral oil, like Canola Oil, Vegetable Oil, or Peanut Oil

Pour the wet ingredients into the dry ingredients. Mix until all of the dry bites have been incorporated, but be careful not to overmix! This can lead to a dense batter. It’s okay if there are lumps, just like pancake batter.

Pour the cornbread batter into a tall glass and dip one hot dog at a time. Allow any excess batter to dip off for 5 seconds, then place the top of the corn dog into the hot oil at an angle. Fry for 5-7 seconds before carefully dropping the entire sourdough corn dog into the oil, this prevents it from sticking to the bottom.

FAQs

Why do you discard when making sourdough starter? ›

In order to allow your starter to grow and flourish, you need to "refresh" it with fresh flour and water. Discarding some first allows you to add this fresh food, whilst maintaining your starter at a manageable size.

How to dispose of sourdough starter? ›

Method 1: Trash Disposal:
  1. Sealing the Starter: Scoop the sourdough starter into a plastic bag. Ensure the bag is strong enough to contain any potential leaks.
  2. Double Bagging: To prevent odors and leaks, you can double-bag the starter.
  3. Disposal: Throw the sealed bag into your regular trash.

What do you do with sourdough discard? ›

The portion of the starter that you didn't use or feed is the discard. You can either literally discard this (in the compost or trash), or use it for sourdough discard recipes. It has fermented, so it has some natural yeast and will be an added lift and a bit of sourdough flavor for your baking recipes.

Can dogs have sourdough discard? ›

What started as a way to use the extra starter and levain that would otherwise go to waste, turned into my dog's absolute favorite treats.

Can I feed my sourdough starter without discarding? ›

If your recipe calls for more than 227g (about 1 cup) of starter, feed it without discarding until you've reached the amount you need (plus 113g to keep and feed again).

What happens if you don t discard half of sourdough starter? ›

If you don't get rid of the excess, eventually you'll have more starter than your feedings can sustain. After a few days, your daily 1/4 cup flour and water won't be enough to sustain your entire jar of starter, and your starter will be slow and sluggish, not much better than discard itself.

How often should I discard sourdough starter? ›

Daily Feeding: If you maintain your starter at room temperature (around 70-75°F or 21-24°C) and want it to be ready for baking within a day or two, daily feedings are recommended. Discard a portion of the starter and feed it with fresh flour and water every 24 hours.

What happens if you forgot to discard starter before feeding? ›

If you didn't discard a portion of your starter each time you feed it, two things would happen: Your starter would grow to an enormous, unmanageable size. Your starter would likely become more and more inhospitable to the bacteria and yeast we want as the mixture would become ever more acidic.

Can I use an active starter instead of discard? ›

Absolutely you can! Active starter can be used in the same way as sourdough discard in sweet or savory baking. You can add active sourdough starter to any recipe you would add discard to following the same calculation.

Is eating sourdough discard healthy? ›

Sourdough discard is rich in probiotics, which can help promote a healthy gut microbiome and improve digestion. It's also a good source of fiber, which can help regulate blood sugar levels, lower cholesterol, and promote feelings of fullness.

What is a substitute for sourdough discard? ›

Add the discard starter to the recipe as a replacement. How much sourdough starter can you substitute? We recommend substituting starter for no more than 1/3 of the flour in the recipe. If you like the result, you can try increasing the percentage the next time.

How long is sourdough discard usable? ›

Sourdough discard only lasts a day or two at room temperature. As such, it is best to keep your discard in the fridge, where it will last for up to one week. Of course, you can only rely on it lasting that long if you store it correctly.

Why can't dogs have sourdough bread? ›

The wild yeast present in sourdough bread can potentially continue to ferment in a dog's stomach. This fermentation can lead to gas production, bloating, discomfort, and even more severe health issues.

What animals can eat sourdough discard? ›

You can feed unused sourdough starter (sourdough discard) to your chickens. It's a great way to introduce fermented foods into their diet and a better alternative than yoghurt (chickens aren't good with dairy).

Can you eat straight sourdough discard? ›

You shouldn't eat sourdough discard raw but you absolutely can eat it cooked! This sourdough fried bread uses pure sourdough discard for the dough. Can You Freeze Sourdough Discard? Yes, you can freeze sourdough discard fried or raw.

What is the difference between feed and discard sourdough starter? ›

A “fed” sourdough starter is ripe, has fermented for several hours, and is ready to be used in a bread-making recipe. An “unfed” sourdough starter has not been fed in a while and is essentially considered sourdough starter discard.

What is the benefit of sourdough discard? ›

What Does Sourdough Discard Do in Recipes? Sourdough discard introduces a mild tanginess and depth of flavour to recipes, distinguishing them from their non-sourdough counterparts. Its natural fermentation process can also contribute to a lighter, more tender texture in baked goods.
